Hey everyone. Welcome back to the blog and in today's post, I am sharing with you all this super simple pepper and tomato soup. It's great for this fall season, it's super simple but packed with flavour! It is also meal-prep friendly, you can keep it in your fridge for up to 4 days. Even when you reheat it, it tastes just as fresh and as good as when you first make it.

I am someone who likes to change up my diet, just for some excitement you know lol
I have tried in the past to go vegan but I just find it slightly painful, for my stomach and my bank account too. So I found a really good medium, I am a Flexi-vegetarian, which basically means plant-based but with occasional meats. In other words, you could say a vegetarian that cheats here and there haha.
In light of this, I have been trying to create more exciting veggie dinners! I am a foodie as you know, I don't compromise on flavour for the sake of 'gainz', sorry but I cannot get rid of my seasoning/sauces. So when I saw this recipe The Body Coach's Instagram, I was super excited to try it! Plus it only took 15 minutes and tasted amazing!

Hey Everyone & welcome back to another addition of Kei's Kookbook. We are back again with another veggie-friendly recipe, featuring Quorn Cumberland Sausages! You guys will gather by now that I love making quick dinners, and this is just another one! Quick, Easy + Tasty. Scroll down for the ingredients and method!
INGREDIENTS
1 Quorn Cumberland Sausage
1/2 Red Pepper
1/2 Brown Onion
50g Frozen Sweetcorn
100G Frozen Sliced Green Beans
1 Cal Spray
Boiled Water
SEASONING
Salt
Pepper
Garlic Granules
PREPARATION:
1. Slice the red peppers as shown in the above photo
2. Chop your brown onions using the french-cut method (shown in the photo)
3. Pre-heat the oven to 180 degrees
METHOD:
1. Place the sausage into the oven and increase the heat to 200 degrees for 10 minutes
2. Boil the kettle, pour the boiled water into a pot
3. Pour your frozen green beans and sweetcorn into the boiling water, then cover with the lid for approx 5 minutes on medium heat (Gas mark 4)
3. Once the 5 minutes are up, pour the water out of the veg and leave them to cool down.
5. Take the 1cal oil and spray it 8-10 times on the pan and let it heat (Gas mark 5).
6. Once the oil is hot, add the sliced or chopped onions into the pan
7. then add the garlic powder to the onions until they start to brown a bit
8. Add the boiled vegetables into the pan, followed by some salt & pepper, mix it all around ensuring that everything mixes well. Then reduce to low heat (Gas mark 1)
9. Once the sausages are cooked, take them out of the oven and slice them in a diagonal format, then add to the vegetable mix.
10. Pour into your desired plate and enjoy!

Hello & Welcome to Ke's Kookbook! Today we are back with a different take on textures, I'm going to tell you how I made a well-seasoned vegetable mix, it literally takes 10 minutes and it truly does taste like it took way more than that! Keep scrolling for the method below,
50G Frozen Sweetcorn
50G Frozen Sliced Carrots
1/2 Bag of Baby Leaf Spinach
1/4 Brown Onion
SEASONING
Salt
Pepper
Potato Seasoning (ASDA)
METHOD
PREPARATION:
1. Chop the brown onions to your desired shape
COOKING:
1. Boil the kettle, pour the boiled water into a pot
2. Pour your frozen Carrots and sweetcorn into the boiling water, then cover with the lid for approx 5 minutes on medium heat (Gas mark 4)
3. Once the 5 minutes are up, pour the water out of the veg and leave them to cool down.
4. Take the 1cal oil and spray it 8-10 times on the pan and let it heat (gas mark 5).
5. Once the oil is hot, add the chopped onions into the pan6. Then add the salt & pepper to the onions until they start to brown a bit
7. Remove the onions and place them on a side plate
9. Then add the spinach and let that cook for 3 minutes, season with salt & pepper
10.Revome the spinach from the pan onto your dinner plate
11. Take the cooked sweetcorn and carrots and add them to the pot to fry, if needed add some more 1 cal spray, then sprinkle the potato seasoning generously.
12. Once the seasoning has sunk in, remove the vegetables from the pot onto your dinner plate, then sprinkle your cooked onions on top.

INGREDIENTS

METHOD:
PREPARATION:
1. Chop the spring onion to your desired size
2. Cut your red peppers, either chopped or sliced
3. Wash the spinach and let it air dry
4. Add the peppers and spinach onto your plate

1. Beat the 2 eggs in a cup/bowl, then season with the salt, pepper and garlic
2. Spray the 1cal oil in your pan over medium heat (gas mark 4)
3. Once the oil is hot, pour the beaten eggs into the pan, ensuring they spread across the entire pan (using tilt motion)
4. Let the eggs cook on that side for about 20-30 seconds then flip the egg the opposite side and repeat the same method.
5. Once browned to your desired level, fold gently in half with a spatula and slide onto a plate
6. Sprinkle the spring onion on top of the egg and enjoy with your side spinach and peppers.
